June Meal Hacks
Thanks for all your feedback around my weekly “Meal Hacks” feature. I have loved hearing about the dinners you’ve tried and how they’ve made meal prep just a little bit easier! Since many of you have asked about where you can access the hacks after the Instagram stories have expired, I thought I’d do a monthly round-up of all my hacks so you have an easy go-to reference. What was your favorite hack this month?
Hack #1: Veggie Packed Dumpling Soup
Ingredients Required:
- 1 package of Trader Joe’s (frozen) Chicken Cilantro Wontons
- 1 carton of Trader Joe’s Miso Ginger Broth
- 1 package of baby spinach
- 1 bunch of green onions, chopped
Method:
Step 1: Bring broth to a boil.
Step 2: Add wontons and allow to cook until they float to the top and are heated through.
Step 4: Stir in spinach and green onions. Add a little Sriracha or other hot sauce if desired.
Hack #2: Bruschetta Pasta

Hack #3: Make at Home Burrito Bowls (For 4 Bowls)
Ingredients Required:
- 1 package of pre-cooked frozen brown rice (about 2 cups total)
- ½ package of Trader Joe’s Melange a Trois frozen bell pepper mix (any brand will do!)
- 1 can of black beans, rinsed and drained
- 1 lb. lean ground turkey or chicken
- ½ package of your favorite taco seasoning
- 1 bag of Trader Joe’s Shredded Green & Red Cabbage Mix (any cabbage mix will do)
- Salsa
- Plain Greek Yogurt
- Pre-made guacamole (I like Trader Joe’s Chunky Spicy)
Method:
Step 1: Heat 1 Tbsp. olive oil in a large fry pan.
Step 2: Add chicken/turkey and taco seasoning and cook until meat reaches an internal temperature of 165°F.
Step 3: Add beans and peppers and cook until heated through.
Step 4: Microwave brown rice per package instructions.
Step 5: Assemble bowls with toppings. For 1 bowl, I used ½ cup brown rice, 1 cup turkey/bean/bell pepper mixture, 1 cup cabbage slaw, 1 Tbsp. Greek Yogurt, 2 Tbsp. salsa, 1 Tbsp. guacamole.
Hack #4: Cauliflower Fried Rice
Ingredients Required:
- 1 package of Trader Joe’s frozen Cauliflower Rice Stirfry
- 4 eggs (2 per person)
- Sliced green onions (optional)
Method:
Step 1: Whisk the eggs together until smooth. Add in salt and pepper to taste.
Step 2: Heat 1 Tbsp. olive oil in a large fry pan.
Step 3: Cook scrambled eggs. Transfer to a bowl.
Step 4: Heat 1 Tbsp. olive oil + 1 Tbsp. sesame oil (if desired) in the same fry pan.
Step 5: Cook Cauliflower Rice Stirfry until heated through.
Step 6: Add cooked eggs and top with green onions. Use a splash of soy sauce if desired.
